This recipe was sent in by Katherine Lewis. This girl knows good food so I would run over to the store, pick up these ingredients and give them a whirl! Let me know what you think.
What you will need:
-eggs
-sugar
-canola oil
-can pumpkin
-flour
-salt
-baking powder
-cinnamon
-baking soda
-baking soda
Let's begin:
4 lg. eggs
1 2/3 c sugar
1 c canola oil
1 16 oz can pumpkinCream together eggs, pumpkin, sugar and oil. Beat in oil.
2 c flour
1 teas salt
2 teas baking powder
2 teas cinnamon
1 teas baking sodaCombine ingredients together and add to above mixture.
Bake 350* for 25-30 min. in a 10" x 15" jelly roll pan. Cool.
FROST USING:
1 3 oz pkg cream cheese
1/2 c butter
2 c sifted powdered sugar
1 teas vanilla
**note- I usually double the cream cheese :)
